- 4 racks of lamb
- 200 gr. semolina
- 1 bunch cilantro
- 2 tablespoons honey
- Herbs to taste (thyme, rosemary, sage …)
- 2 cloves garlic
- Olive Oil
- n a bowl, mix one tablespoon of olive oil with honey, minced garlic and herbs. Spread the mixture over the racks of lamb and roast in the oven for 20 minutes at 190ºC until lamb is well browned.
- Meanwhile, hydrate the semolina by barely covering with water or vegetable stock. Once hydrated, chop the cilantro and mix with a pinch of salt and the semolina. Heat in the oven or saute with a knob of butter. Serve the roast lamb on the semolina.
To flavor the semolina, add a generous splash of orange flower water or stock while hydrating.
