- 4 partridges
- 2 bananas
- 2 scallions
- 1 leek
- 1 clove garlic
- 1 carrot
- 50 gr. chocolate with (70% Cocoa)
- 500 ml. chicken stock
- Clean and cook the partridge in a saucepan with a drizzle of olive oil. When they start to brown, add the julienned onions, carrots, garlic and leeks.
- When the vegetables are browned, add the chicken stock and simmer for half an hour.
- Add the chocolate and cook for a further 10 minutes. Serve the partridge accompanied by the sauce and fried banana, fried in hot frying pan with a drizzle of olive oil.
Run the sauce through a blender before adding the chocolate for a creamier, smoother sauce
