Ingredients
  • 600g horse meat fillet
  • 2 Figueras onions
  • 1 tablespoon honey
  • 8 small plum tomatoes
  • 4 sprigs rosemary
  • 100g sugar
  • 1 eggplant
  • 1 zucchini
Preparation
  1. Peel the sprigs of rosemary and stick on pieces of meat, interspersed with quarters of eggplant and zucchini. Fry on the griddle with a drizzle of olive oil and a pinch of salt.
  2. While the meat is cooking, peel the tomatoes, cut in half and remove seeds. Sauté in a pan coated in sugar. Meanwhile, sautee the clean and sliced calçots with a drizzle of olive oil. When they start to soften, add a spoonful of honey and let the calçots caramelize.
  3. Serve the caramelized calçots, tomatoes and meat skewers. Season with a pinch of Maldon salt and a drizzle of olive oil.
