Ingredients
  • 2 Kiwis
  • 2 Mangos
  • 250g strawberries
  • 1 Pineapple
  • Other fruit
  • 200g sugar
  • 4 egg yolks
  • 1 vanilla pod
Preparation
  1. Cut the fruit into 2cm cubes and stick on a skewer. Any fruit will do though in this case, we’ve  used mango, pineapple, kiwi and strawberries
  2. Beat the egg yolks with half the pulp of vanilla pod and sugar. Stiffen it with an electrical whisk in a bain Marie for about 10 minutes until the mixture thickens considerably.
  3. Bathe the fruit with this sauce and singe with a kitchen torch, or cook briefly in the oven. Serve.
