Ingredients
  • 2 bunches fresh spinach
  • 4 cloves garlic
  • 1 and a half glasses of water
  • Cashews
  • 2 teaspoons yeast
  • Lemon juice
  • 1 tomato
  • 1 tablespoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon chives
Preparation
  1. Soak the cashews.
  2. Bring lightly salted water to the boil. Meanwhile, wash the spinach.
  3. Boil the spinach for 2 minutes. Then drain.
  4. Drain the cashews to remove the water and put them in a blender with yeast, 1 ½ cup water, lemon juice and a little salt and blend until you have a smooth cream.
  5. Slice up the garlic cloves and saute with a little olive oil until slightly browned.
  6. Add spinach and sear over a high heat until it starts to brown.
  7. Finally add the cream, cook for another minute over a medium heat and add salt & pepper.
  8. Serve spinach with a little diced tomato and chives on top.
