Ingredients
  • 2 medium lobsters
  • 2 scallions
  • 1 tomato
  • 1 leek
  • 1 glass of white wine
  • 1 glass of fish stock
  • Salt and pepper
Preparation

Open the lobsters in half and place in a baking pan. Season with salt and pepper. Put the tails in the oven at 200º for about 8-10 minutes. Meanwhile, saute the finely chopped onion, leek and tomatoes with a drizzle of olive oil. When the vegetables start to brown, add the opened lobster heads and a glass of white wine and simmer till the alcohol evaporates. Then add the fish stock and let everything simmer for about 5 minutes. Reserve. Take the tails out of the oven and serve accompanied by slices of orange and lemon. Strain the sauce, season with salt and pepper and serve in a bowl to accompany the lobster tails.

Freeze the lobsters half an hour before cutting to make it easier and to prevent losing the juices.
