- 2 pomegranates
- 1 lt. red wine
- 150 gr. sugar
- 1 cinnamon stick
- 1 lemon rind
- 1 orange rind
- Simmer the wine In a saucepan over a medium heat with the fruit rind and cinnamon stick.
- Allow the volume to reduce by half. Then add the sugar and simmer for a further 10 minutes.
- Remove from heat and allow to cool.
- Serve pomegranate seeds in four serving bowls with the red wine sauce.
Serve with ice cream. Use vanilla if you don’t have cinnamon. You can serve with peeled orange segments.
