Ingredients
  • ¼ cup tapioca
  • 1 to 2 firm ripe bananas
  • 1 ½ can of coconut milk
  • ¼ cup sugar
  • 1 pinch of salt
  • ½ pitaya or red dragon fruit
  • Lime rind
Preparation
  1. Cook the tapioca in plenty of boiling water according to package instructions, stirring occasionally.
  2. Add the coconut milk, sugar and salt to a saucepan and mix well. Add the banana, peeled and sliced lengthwise. Cook for about 8 minutes, let cool and mix with tapioca. You can sweeten it with a little honey.
  3. Peel and dice the pitaya.
  4. Serve the soup cold with lime zest and a few pieces of pitaya.
