- 1 kg. cherries
- 1 vanilla pod
- 100 gr. sugar
- 300 ml. water
- Use a cherry pitter or olive stoner to remove the stones from the cherries.
- You can also use a small kitchen knife.
- Put all the ingredients – the cherries, sugar, vanilla and water – in an earthenware casserole dish and simmer for 30 minutes until the cherries release their juices.
- Puree the the fruit, strain and allow to cool. Serve with seasonal fruit, fruit skewers or with any chocolate desserts.
You can sweat the cherries without water over a very low heat, giving you about 300 ml. of cherry juice with a very intense flavor and long shelf life.
