Ingredients

For the pastry:

  • 200g wheat flour
  • 1 teaspoon salt
  • 1 tablespoon of sugar
  • 120g of organic flour
  • 4 tablespoons of water

For the filling

  • 60g flour
  • 20g corn starch
  • 400g of blueberries
  • 4 tablespoons of lemon juice
  • 2 teaspoons of cinnamon
  • 1 teaspoon of lemon peel
Preparation
  1. For the pastry: Sift the flour with the salt and sugar, then mix then mix with the margarine on a work table or in a bowl and knead together for one minute
  2. Gradually add the water and continue to knead.  Set aside in the fridge.
  3. Meanwhile prepare the filling.  Sift the flour, cornstarch and sugar into a bowl then add the remaining ingredients and mix well.
  4. Heat the oven to 200 C.  Spread a little margarine into a baking tray, then take the pastry from the fridge, divide it into two and roll out the dough using a little flour on the rolling pin to prevent it from sticking, then place it into the mould making sure it covers the edges, the take a fork and prick the base, now add the filling and place cover with the remaining pastry.  
Now brush on a little oil and sprinkle with sugar.
