- 3 zucchini
- 2 cloves of garlic
- 6 eggs
- Salt and pepper
- Olive oil
- Peel and chop the garlic, wash the corgette and cut it into cubes and place in a frying pan with the olive oil. Sauté with the garlic, salt and pepper then set aside.
- Now lightly beat the eggs with a pinch of salt and pepper and add the sautéed corgette and mix.
- Heat a frying pan with some olive oil and add a quarter of the egg and corgette mix, fry for a few minutes then turn it over and cook for a couple more minutes. Repeat this 3 times with the rest of the mixture
