Ingredients
  • 360 gr paella rice
  • 4 artichokes cut into quarters
  • 120 g of pumpkin cut into small cubes
  • 4 small chopped onions
  • 120 gr of green pepper in small cubes
  • Extra virgin olive oil
  • 4 slices of grilled cod fillet (150 gr)
  • Fish stock
  • 4 grated tomatoes
  • 4 tbsp of fresh paprika
  • Salt
  • Black pepper
Preparation

Preparing the paprika oil:

  1. In a saucepan, add a little olive oil and heat to 60º. Add the paprika stir and then let it stand. It is Important that this is a smooth tasting oil so as not to give the rice a bitter taste

For the rice:

  1. Sauté the onion with some olive oil, add the artichoke, pepper and pumpkin then add the grated tomatoes and season to taste.
  2. Add the rice and gradually add the fish stock. Halfway through cooking the rice add the slices of cod over the top of the paella along with the paprika oil
