Ingredients
  • 1 pre-cooked pizza base
  • 125 gr. Mozzarella sliced and well drained
  • 50 gr of arugula
  • 2 ripe tomatoes
  • 30 gr of parmesan cheese in flakes
  • Extra Virgin Olive Oil
  • Basil
  • Salt

For the tartar:

  • 150 gr of beef
  • 5-6 black olives
  • 15 gr of capers
  • 1 dried tomato in oil
  • 3 basil leaves
  • Black pepper
  • Salt
  • Extra virgin olive oil
Preparation
  1. Blanch the tomatoes for 1 minute in boiling water and then chill quickly in cold water. Remove the  skin and seeds and dice. Garnish with salt, oil and a little chopped basil
  2. Heat the oven to maximum temperature.

For the tartar:

  1. Finely chop the very veal with a sharp knife
  2. Now finely chop the olives, capers, dried tomato and the basil
  3. Mix all the ingredients together and add a little oil, salt and pepper. Do not add too much salt since the olives, capers and tomatoes are very salty. Reserve the tartar in the fridge.
  4. Slice up the well drained mozzarella and place on top of the pizza. Place in a very hot oven for 5-10 min until the pizza base is cooked. (The time may vary depending on each oven)
  5. Once the pizza is cooked, take it out of the oven and sprinkle a few basil leaves over the pizza then add the tartar “quenelles”, sliced tomatoes, arugula and  and the flaked parmesan. Top it off with a dash of olive oil and serve.
