- 500 gr. anchovies
- 1 egg
- 1 tablespoon flour
- 100gr. sliced cheese
- Olive oil
- Thoroughly clean the anchovies, open them up, and remove the backbone and all the finer bones with a tweezers. Lay a layer of cheese on top of one anchovy and then top with another anchovy.
- Carefully coat the anchovies in flour and beaten egg and fry in hot olive oil for a minute on each side. Remove from oil and drain on kitchen paper.
To wash the anchovies, soak for a while in ice water and salt: this will remove blood giving you an even cleaner fish. Try filling with peppers, or padrón peppers when in season.
