Ingredients
  • 500 gr. anchovies
  • 1 egg
  • 1 tablespoon flour
  • 100gr. sliced cheese
  • Olive oil
  • Salt

 

Preparation
  1. Thoroughly clean the anchovies, open them up, and remove the backbone and all the finer bones with a tweezers. Lay a layer of cheese on top of one anchovy and then top with another anchovy.
  2. Carefully coat the anchovies in flour and beaten egg and fry in hot olive oil for a minute on each side. Remove from oil and drain on kitchen paper.

 

To wash the anchovies, soak for a while in ice water and salt: this will remove blood giving you an even cleaner fish. Try filling with peppers, or padrón peppers when in season.
