- 4 Whiting
- Olive oil
- 4 tomatoes
- 4 cloves of garlic
- 1 lemon
- In a baking tray take the 4 whiting and curl them so the heads are touching the tails, in the center of the fish place the tomatoes and make a cross on the tops of using a sharp knive.
- Slightly crush each of the garlic cloves and place on top of the tomatoes along with a splash of olive oil and a pinch of bread crumbs
- Sprinkle everything with parsley and add wedges of lemon to the tray then roast at 180 degrees for 20-25 minutes until the fish is cooked.
- Remove from the oven and serve with the garnish.
You can make a slight incision on the fish to allow the heat to penetrate into the flesh which will speed up the cooking of fish.
