Ingredients
  • 150 g whole grain spaghetti
  • Sea salt
  • Olive oil
  • 1 onion
  • 1/2 broccoli
  • 80 g pitted black olives
  • or 50 g sweet corn
Preparation
  1. Bring plenty of water to the boil.  Add salt and spaghetti. Cook the pasta until it is done (follow the package instructions). Drain and rinse under cold running water. Add a splash of olive oil to prevent sticking. Reserve.
  2. Peel onions and mince. Heat a drizzle of olive oil in a frying pan and saute the onion with a pinch of salt until it turns transparent. Add small florets of broccoli to the frying pan. Saute for a further 2 minutes, then cover the frying pan, turn down the heat and cook for about 15 minutes. Then increase the heat and add the spaghetti, sweet corn, black olives and salt. Saute for one minute and serve immediately.
