For the base

  • 100 gr. buckwheat flour
  • 10 pitted dates
  • 1 tablespoon coconut butter
  • 80 gr. walnuts, soaked for at least 8 hours
  • 20 gr. cocoa
  • 1 teaspoon spirulina
  • 1 teaspoon vanilla powder
  • 1 pinch salt

For the filling

  • 200 gr. Apple
  • Half a lemon
  • 1 teaspoon cinnamon
  • 1 teaspoon poppy seeds
  • Carob syrup
  • Raspberries
  • Mint leaves
  1. For the base, blend all ingredients until the dough is pliable.
  2. For the filling, peel and cut apples into half moons and marinate for a while in cinnamon, lemon juice and zest
  3. Mold the dough base with your hands into any shape you like. You can also use conventional pastry molds.
  4. Fill the base with apples, and garnish with poppy seeds, a few tablespoons of syrup, mint leaves and some chopped or whole raspberries.
