Ingredients
  • 8 slices of bread
  • 3 balls of mozzarella
  • 2 tomatoes
  • 200 gr. rocket
  • Coriander leaves
  • Parsley
  • Oregano
  • Olive oil
Preparation
  1. Cut the mozzarella into slices 1cm thick, place on the slices of bread and top with tomato slices. Place in the oven at 200 º for 6-8 minutes, until cheese begins to melt.
  2. Serve the bread with salad of rocket, oregano, parsley and fresh coriander leaves. Don’t forget to sprinkle the toast with a good olive oil and some salt flakes.
Add a few slices of cured ham as a final flourish. You can prepare this dish as if it were a salad, in which case it’s not necessary to use the oven. You can also accompany the toast with smoked salmon or cod.Young fresh and fruity red wines with a pleasant texture and freshness to match the tart taste of the tomatoes. For example, Llabustes Merlot 2006 from Bodegas Vila Corona D. O. Costers del Segre made with Merlot.
