- 6 Chicken thighs
- 4 shallots finely sliced
- 2 Large tomatoes sliced
- 150g mushrooms sliced
- Sweet chili sauce
- Olive oil
- A splash of soy sauce
- Heat the oven to 180 degrees
- Fry the onions until translucent and spread over the bottom of an oven proof dish then fry the mushrooms with a splash of soy sauce, layer them on top of the onion, then slice the tomato add to the mushroom. Season with a little salt and pepper.
- Heat a little more olive oil in the frying pan and sear the chicken thighs until golden brown on each side then place on top of the tomatoes. Pour some sweet chili sauce on the top and place in the oven for 3/4 hour or until the chicken is cooked.
- Serve with mashed potatoes and broccoli
