Ingredients
  • 2 onions
  • 1 leek
  • 1 egg
  • Filo pastry
  • Shrimp
  • Olive oil

 

Preparation
  1. Cut the onion and leek in very thin julienne strips, saute in a splash of olive oil and, when the vegetables are softened, leave to one side on absorbent kitchen paper.
  2. Cut filo pastry into 4 cm-wide strips, placing inside a teaspoon of onion, caramelized leek and peeled shrimp.
  3. Wrap up the dough triangles, and seal by brushing with beaten egg.
  4. Fry in plenty of olive oil and serve hot after draining excess oil.
If you can’t get hold of filo pastry, use won-ton and leave out the vegetables, then serve with mayonnaise.Chilled white wine, cava or champagne.
