- 2 onions
- 1 leek
- 1 egg
- Filo pastry
- Olive oil
- Cut the onion and leek in very thin julienne strips, saute in a splash of olive oil and, when the vegetables are softened, leave to one side on absorbent kitchen paper.
- Cut filo pastry into 4 cm-wide strips, placing inside a teaspoon of onion, caramelized leek and peeled shrimp.
- Wrap up the dough triangles, and seal by brushing with beaten egg.
- Fry in plenty of olive oil and serve hot after draining excess oil.
If you can’t get hold of filo pastry, use won-ton and leave out the vegetables, then serve with mayonnaise.Chilled white wine, cava or champagne.
