Ingredients
  • 600g of fresh salmon
  • 1 spring onion
  • 1 lemon
  • 2 large cucumbers
  • 1 chili
  • Grain mustard
  • Olive oil
  • Maldon salt
  • 1 egg
Preparation
  1. This dish can be eaten raw as a starter (tartar), or a hot main course as a hamburger, it is prepared in the same way.
  2. To start with, dice the salmon into very small pieces.  The, salmon must be very fresh as it can be eaten raw if a’ tartar’. Chop the chives, cucumber and chili as thin as possible, mix well and add the juice of a lemon and a generous stream of olive oil.   Let it soak for about 15 minutes and add the mustard seeds and salt flakes.  Serve the tartar accompanied by a salad or add the egg to form patties and fry in a pan with a drizzle of olive oil and a pinch of salt.  Do not overcook the salmon as it is very fresh, and will lose its flavor! Add some tomato as a garnish for the burger. 
I am in favor of "anything that can be eaten raw should be eaten raw" and salmon, cod, tuna, prawns, shrimps, etc. work well. I prefer to taste them fresh from the sea. If the fish is overcooked, it will lack the flavor of the sea.
