- ½ pineapple
- 600 gr. mango
- 3 tbsp of brown sugar
- 1 ½ tablespoons cinnamon
- 2 tablespoons orange zest
- 1 tablespoon chopped fresh basil or mint
- Peel the pineapple and cut into rings.
- In a bowl, mix the brown sugar with the cinnamon and coat the pineapple rings on both sides
- Heat a heavy nonstick frying pan or flat-top grill and heat the pineapple and mango for about five minutes on each side until they caramelize.
- Garnish the fruit with orange zest and chopped herbs.
