Ingredients
  • 2 legs of lamb, 600g. each
  • 1 tablespoon of star anise
  • 1 cinnamon stick
  • 2 onions
  • 2 tomatoes
  • Half a bulb of garlic
  • Olive Oil
  • White Wine
  • Salt
Preparation
  1. Place the two legs of lamb in a roasting dish, with tomatoes cut in half, quartered onions, crushed garlic, the cinnamon stick and star anise. Drizzle with a dash of olive oil and a glass of white wine. Roast in the oven for 15 minutes at 190ºC.
  2. By then the wine should have cooked off. Now add water gradually over the remainder of the cooking time. Continue roasting for 45 minutes. Turn the legs of lamb over to brown well. Serve immediately.
You can add some potatoes to the roasting dish to accompany. Or try with hydrated semolina.
