- Puree the mango and mix with the juice of 2 oranges. Strain and reserve in the refrigerator.
- Keep aside two raspberries for each glass and blend the rest. Strain through a very fine sieve, reserve in a small dish.
- Dip the rim of the glass in the raspberry coulis and then in powdered sugar. Pop two raspberries in each glass, 1 / 3 orange juice and 2 / 3 of champagne, accompanied by a slice of star fruit, a phisalis or your favorite fruit.
You can add raspberry coulis to the cocktail for a slightly acidic and refreshing flavor.
