Ingredients

 For Mató mousse:

  • 200 gr. of Mató cheese (if possible from goat's milk)
  • 150 ml. cream
  • 50 gr. sugar
  • 1 sheet gelatin (2 gr)

For the honey biscuit:

  • 75 gr. honey
  • 25 ml. milk
  • 50 gr. flour

For the orange and saffron:

  • 100 ml. orange juice
  • 50 gr. sugar
  • 1 gr. agar-agar powder
  • saffron

 

Preparation
  1. Heat some of the cheese  in the microwave with the previously hydrated gelatin sheet. Add the remaining sugar and cheese.
  2. Whip the cream and fold in the mixture. Leave to set in the fridge.
  3. For the biscuit, mix all ingredients together and roll out the dough on baking paper. Bake in the oven at 180 º C until golden brown. When not quite cooled, cut into the desired shape.
  4. For the jelly, boil the orange juice with sugar and agar-agar. Add the saffron and leave to infuse 5 minutes. Cool in the refrigerator and mix in the blender.
  5. Serve a dollop of mousse in the center of the plate. Surround with orange jelly and decorate with biscuit, and with some orange segments.
