Ingredients
  • 100 gr. sugar
  • 100 gr. water
  •  600 gr. mandarin juice
  •  1 vanilla pod
  •  300 gr. coconut
  •  150 gr. cream
  •  30 gr. sugar
  •  2 sheets of gelatin
Preparation
  1. Make a syrup by simmering the water and 100 gr. sugar.  Take the vanilla pod, slit it open lengthways and scrape out the seeds and add.  Allow to cool. Mix the syrup with the mandarin juice.
  2. For the coconut mousse, whip the cream with some sugar. Meanwhile, heat a small part of the coconut mix in the hydrated gelatin. Add the rest of the coconut, mixing well with a whisk. Carefully fold it into the cream. Allow to set in the refrigerator for a couple of hours.
  3. Shape the mousse by smoothing the mixture between two hot dessert spoons.
