  • 600g  lamb for stewing
  • 2 lemons
  • 1 bunch parsley
  • 2 cloves garlic
  • 2 spring onions tender
  • 2 large potatoes
  • 1 teaspoon flour
  • 1 cup white wine
  • 1 spray olive oil
  • salt and pepper
  1. In a pan, fry the onions with the garlic
  2. Before the vegetables start to brown add the chopped lamb and brown slowly.
  3. Add a teaspoon of flour to the casserole and cover with the white wine, let the alcohol evaporate and cover with water, let simmer for about 35-40 minutes,making sure to stir now and again.
  4. Five minutes before the end of the stew is ready add a good handful of chopped parsley and the juice of two lemons, salt & pepper and served over a baked potato cut into slices.
