Ingredients
  • 2 liters vegetable stock
  • 1/2 a small squash
  • 6 shitake mushrooms
  • 1 block of tofu
  • 2 sheets nori
  • 1 chopped onion
  • 4 tablespoons miso
  • 600 gr. udon noodles

For the tempura

  • 650ml. cold water
  • 300 gr. potato starch
  • 1 tablespoon baking powder
  • 1 tablespoon salt
  • ½ squash

 

Preparation
  1. Simmer the shiitake in the vegetable broth for 10 minutes over low heat. Turn off the heat and add the miso, onion and diced tofu. Stir in the udon noodles 5 minutes before serving.
  2. Prepare the tempura. Peel the squash and slice into thin crescents.
  3. Mix flour, starch, yeast and salt in a bowl. Gradually add cold water until you have a smooth batter.
  4. Heatthe oil in the frying pan. Dip the squash pieces in the tempura batter and fry one by one until they start to brown.
  5. Serve the miso and udon noodles in a bowl with 3 or 4 pieces of squash tempura.
