Ingredients
  • 100 gr. flour
  • 400 ml. milk
  • 250 gr. crumbled cod
  • 1 bunch parsley
  • 2 cloves garlic
  • Half a sring onion
  • 1 small green pepper
  • Half a leek
  • Egg
  • Salt
  • Pepper
  • Olive Oil
Preparation
  1. Saute the finely chopped vegetables with a drizzle of olive oil in a frying pan over a low heat, taking care not to brown them.
  2. Add the cod and a tablespoon of chopped parsley. Mix well and allow the cod to cook through.
  3. Add flour, mix well and pour in the milk slowly while stirring constantly with a whisk until it forms a thick but light Bechamel sauce. Season with salt and let cool.
  4. Form the Bechamel dough into croquette shapes with the aid of a fork and coat in flour, egg and breadcrumbs. Allow to cool for a few minutes in the refrigerator before cooking in in plenty of olive oil. Serve.
