Ingredients
  • 300 gr. organic carrots
  • 2 tablespoons chopped chives
  • 100 gr. rice flour
  • 2 organic eggs
  • 150 ml. organic soy beverage
  • Olive Oil
  • For the mayonese:
Preparation
  1. To make the pancakes, first wash the carrots, and finely grate.
  2. In a bowl, mix the flour with eggs and soy beverage. Add the grated carrots, and mix and season with salt and pepper.
  3. Pour a few drops of oil into a small frying pan (about 12 cm across) and add half a spoon of batter. Allow the underside to set and flip to cook the other side. They should be nicely browned on both sides. Repeat with the rest of the batter.
  4. Serve with carrot mayonnaise
