  • 750 gr. of stewing beef
  • 1 large onion
  • 1 medium ripe tomato
  • 1 small garlic clove
  • 1 bay leaf
  • Black peppercorns
  • Clove
  • 1 / 4 cinnamon stick
  • 1 glass red wine or cognac
  • 1 kg. potatoes
  • Powdered food coloring
  • Olive oil
  • For the topping:
  • 50 gr. roasted almonds
  • A pinch of nutmeg


  1. Wash the pieces of beef.
  2. In a frying pan, fry the beef in oil, add wine and reduce.
  3. Add the onion and tomato (quartered), bay leaf, cloves, black peppercorns, garlic and cinnamon stick. Cover with water and bring to the boil. Cook over a low heat about 20 min.
  4. Peel, wash and chop the potatoes. Chop them roughly so that they release their starch and thicken the broth of the stew. Add the potatoes with a little coloring to the pan and cook about 15 minutes until the potatoes are soft.
  5. Prepare a topping with almonds and a pinch of nutmeg. Add to the tew at the end of cooking and stir well. Season with salt.
