Ingredients
  • 4 or 6 strawberries

For the cream:

  • 200 ml. cream
  • 200 ml milk
  • 30 gr. of sugar
  • sprigs of rosemary

For the slushy:

  • 250 ml. grapefruit juice
  • 25 gr. sugar
  • 20 ml. Campari
Preparation
  1. Dice the strawberries.
  2. Boil the milk with sugar. When it starts to boil, add the rosemary and leave to infuse off the heat about 5 minutes. Strain and add the cream. Reserve in refrigerator.
  3. Boil half of the grapefruit juice with sugar. Add the remaining juice and add the Campari. Put in the freezer and stir every two hours until it is  iced.
  4. Use a cylindrical mold to assemble the strawberries. Top with a tablespoon of slushy.
  5. Whisk the cream into a milky froth. Place the foam to the side of tartar. Garnish with a flower.
