- 200 gr. egg white
- 800 gr. watermelon
- 4 sheets of gelatin
- 1 trap
- 2 loads of gas
- Vanilla ice cream
- Blend the watermelon in a blender and strain.
- Hydrate the gelatin in cold water. Heat a small amount of the watermelon pulp and add diluted gelatin, little by little and mix in well the rest of the watermelon and egg whites.
- Fill the siphon with the mixture up to ¾ full, cover and give 2 charges of gas. Refrigerate about 5 hours.
- Serve watermelon foam in glasses with some blackberries and vanilla ice cream.
