- 600 gr. of very fresh tuna steak
- 100 gr. black sesame seeds
- 1 mango
- Chop the tuna into four cubes, season and leave to stand outside the fridge for half an hour.
- Brush with olive oil and cover one side with sesame seed, pressing down well.
- Sear in a hot frying pan for one minute on each side. It should be completely raw in the center.
- Cut the mango into thin slices, and place the tuna on top. Season with a little sea salt.
