- 6 eggs
- 1/2 kg. potatoes
- 1 onion
- 1 zucchini
- 1 l. oil
- Peel and chop the potatoes, onions and zucchini. Fry the potatoes and onions in plenty of oil over a medium heat. Remove them and then fry the zucchini in the same oil. Season and reserve.
- In a bowl, beat the eggs with a pinch of salt and mix with potatoes, onions and zucchini.
- Heat a little oil in a frying pan, pour in the egg mixture, and cook over a low heat. Flip and allow to continue cooking through slowly.
- Serve hot or cold.
