- 2 tart apples
- 2 trout
- Lamb’s lettuce
- 1 lime
- 1 lemon
- 150 gr. Iberian ham
- Olive oil
- Carefully remove the bones from the trout, making sure not to leave single one, and cut the fillets into small cubes. Steep in lime and lemon juice and marinate for 8-10 minutes.
- Remove fish from the juice and pour in olive oil and set aside. Dice the apple and avocado into small cubes, chop the herbs and slice the ham into thin strips.
- With the help of a mold, make a little “drum”, starting with the avocado, then layers of apple, trout, salad, herbs and ham to finish. Sprinkle with olive oil and serve.
You can use trout roe or salmon instead of ham to maintain the flavor of the sea.
