A super soup with exotic ingridients

Ingredients
  • 1 small can of pineapple
  • 1 can whole tomatoes
  • 200 gr. fresh tofu
  • 2 cloves garlic
  • 3 shallots
  • 5 cm. fresh ginger root
  • 100 gr. bean sprouts
  • 2 tablespoons soy sauce
  • 1 spring onion
  • Mint and cilantro leaves
  • Sunflower oil
  • Vegetable broth
Preparation
  1. Chop the garlic and shallot and grate the ginger. Sauté in a frying pan with sunflower oil
  2. Add the can of tomatoes and chopped pineapple along with half the syrup from pineapple tin and three cups of vegetable stock. Cook over a medium heat for several minutes.
  3. Add soy sauce, mix well and season with salt.
  4. Add bean sprouts and cubes of tofu and simmer for 5 minutes.
  5. Serve with mint and cilantro leaves, and thinly sliced onion.
