Ingredients
  • 2 large eggplant
  • 2 Red peppers
  • 2 cloves garlic
  • 200 gr of niscalos
  • 8 slices of bread

 

Preparation
  1. Roast the peppers and eggplant. Peel and cut into slices and add salt and pepper to taste. In a frying pan, stirfry the niscalos and the sliced garlic. Toast the bread and carfully place the vegetables and mushrooms on top. Add a bit of parsley fot the finishing touch. Enjoy!
If you don´t have an oven you can cook them in the microwave for 8 mins with a bit of olive oil and a plastic cover over the vegetables
