- 200 gr. spinach
- 1 pomegranate
- 50 g. smoked bacon
- 1 Figueras red onion
- 3 tablespoons olive oil
- 1 teaspoon mustard seeds
- 1 teaspoon honey
- 1 teaspoon cider vinegar
- Mix the mustard seeds with olive oil, honey and cider vinegar. Reserve.
- In a pan with barely a teaspoon of oil, saute the bacon cut into strips with thinly sliced onion.
- Once they begin to brown, serve in a bowl with the washed spinach leaves and the pomegranate grains. Serve with vinaigrette.
You can add a few slices of smoked cod, goat cheese, or even fried artichokes.
