Ingredients
  • 200 gr. spinach
  • 1 pomegranate
  • 50 g. smoked bacon
  • 1 Figueras red onion
  • 3 tablespoons olive oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon honey
  • 1 teaspoon cider vinegar
Preparation
  1. Mix the mustard seeds with olive oil, honey and cider vinegar. Reserve.
  2. In a pan with barely a teaspoon of oil, saute the bacon cut into strips with thinly sliced onion.    
  3. Once they begin to brown, serve in a bowl with the washed spinach leaves and the pomegranate grains. Serve with vinaigrette.
You can add a few slices of smoked cod, goat cheese, or even fried artichokes.
