Ingredients
  • 500g spaghetti Afeltra
  • 1 clove garlic
  • 1 onion
  • 2 garlic sprouts
  • 200g fresh foie
  • 150ml chicken stock
  • 150ml cream
  • 350g mixed fresh mushrooms
  • ½ cup white wine
  • Chives
  • Salt and pepper
  • Olive oil



 

Preparation
  1. Chop the onion, garlic and garlic sprouts, and saute with a little oil. When they begin to brown, add the mushrooms and cook a few minutes, before adding the white wine. Season.
  2. Heat the chicken broth and cream, add the foie and wait a few minutes. Blend well with a food mixer on low speed. Season a pinch of salt and pepper.
  3. Cook pasta in salted, boiling water, according to instructions. When ready, drain and mix with the mushrooms. Sauté all together for one minute, and serve with foie gras sauce and chopped chives.
