Ingredients
  • 36 pieces of seitan
  • 24 pieces of yellow pepper cut into rectangular pieces
  • 12 skewers
  • For the marinade:
  • 6 tablespoons paprika
  • 2 tablespoons cayenne pepper
  • 1/4 teaspoon ground cumin
  • 2 teaspoons chopped parsley
  • 1/4 cup olive oil
  • 1 clove of garlic
  • 1 tablespoon thyme
  • Salt

For the strawberry sauce:

  • 1/2 kilo of strawberries
  • 6 tablespoons brown sugar
  • 2 red onions
  • 1 clove garlic
  • 1 teaspoon grated ginger
  • 1/2 cup water
  • 1/4 cup sherry vinegar
  • 1 tablespoon ketchup
Preparation

For the marinade and skewers:

  1. Blend all the ingredients, add to bowl and add chunks of seitan. Allow to marinate for 1 day.
  2. Place 3 pieces of seitan and 2 pieces of yellow pepper on each skewer.
  3. Heat a flat top grill and add a little oil. Cook the skewers over a medium heat for 3 minutes on each side.

For the sauce:

  1. Blend all the ingredients and strain.
  2. Simmer over a low heat in a saucepan and stir constantly to prevent sticking. Simmer for 15 minutes or until it thickens.
  3. Blend again to remove lumps and keep in a refrigerator for two hours before serving.
  4. Serving: Serve the skewers with some salad leaves.
