- 1 bunch asparagus
- 150 gr. duck ham
- 50 gr, pine nuts
- 50 gr. blue cheese
- 4 small eggs
- Olive oil
- 1 clove garlic
- Cut the asparagus in half lengthwise, and boil for 3-4 minutes.
- Remove from boiling water, dry slightly and add to frying pan with a drizzle of olive oil, chopped garlic clove and nuts. In this recipe we used pine nuts. Saute asparagus for a couple of minutes and add the duck ham just before serving.
- Place in serving dish and add some crumbled blue cheese and boiled egg (cooked for 4 minutes, with the yolk still runny).
You can also prepare this dish with cod or shrimp instead of duck ham and cheese. Or try with fried eggs instead of poached eggs.Young red wine or crianza.
