Ingredients
  • 6-8 very fresh sardines
  • 3 avocados
  • 1 scallion
  • Juice of 1 lime
  • Strawberries
  • Violet petals
  • Rice Vinegar
  • Olive Oil
  • Salt
  • Pepper
Preparation
  1. Remove scales and bones from  sardines. Rinse under cold running water. Season with salt and cover with rice vinegar for 20 minutes. Rinse the sardines under  cold running water to remove the vinegar. Put them in a covered container and cover with olive oil until ready to use. They will keepp for a week in the refrigerator, covered with oil.
  2. Slice open the avocados, remove the stone and skin. Put them in a bowl with the lime juice, salt and pepper,and mash with a fork into a paste. Add the finely chopped scallion and mix well.
  3. Lay out  bed  of avocado, and top with sardine fillets, cut in half. Decorate with strawberries and violet petals. Finish with some flakes of sea salt and olive oil.
