- 125 gr. tuna in oil
- 2 hard boiled eggs
- 2 potatoes
- 1 red pepper
- 1 carrot
- 50 gr. of peas
- 4 tablespoons mayonnaise
- ½ lemon
- Cook potatoes with skin. When they are tender, let them cool, peel and cut into small cubes.
- Peel the carrots and boil in salted water. Let cool and cut into small cubes.
- Mix the potato, carrot, peeled and chopped eggs (or grated), diced red pepper and peas. Season, add the drained tuna and a squeeze of lemon juice. Finally, add mayonnaise. Mix well and serve or refrigerate tightly covered.
This recipe works very well with finely chopped chives. We can substitute raw red pepper with roast peppers.
