Ingredients
  • 2-3 courgettes
  • 4 carrots
  • 3 red onions
  • Assorted cherry tomatoes
  • 2-3 cloves of black garlic
  • 1 pack of wild asparagus
  • 2 Tbs Of tahini
  • 100 ml of sherry vinegar
  • 400 ml of olive oil
  • 1 ½ tablespoon of sugar
  • Onion Seeds
  • Salt and pepper
Preparation
  1. Wash all vegetables, chop up the courgette and cut the red onions into quarters or sixths.
  2. Place some baking paper on a baking tray sprinkle over some olive oil and season, Add the carrots and onions and sprinkle on some salt and pepper then place in a preheated oven 200º for about 10 minutes. Now add the courgettes and asparagus, season then roast the everything for about 15-20 minutes.
  3. In another oiled roasting tray place the cherry tomatoes along with the vine season and sprinkle with a little sugar then roast for about 25 minutes.
  4. Now make a vinaigrette, place the black garlic, tahini, vinegar, salt, pepper, 1 tbsp of sugar and a little water in a mixing glass, mash with a blender and gradually add the olive oil while still blending .
Presentation
  1. Serve the roasted vegetables with the vinaigrette and onion seeds
