Ingredients
  • 12 green asparagus
  • 12 thin slices Serrano ham
  • Coarse salt
  • Pepper
  • Olive oil

For the aioli:

  • 5 tablespoons olive oil,
  • 1 tablespoon lemon juice,
  • 3 cloves garlic,
  • 2 egg yolks
Preparation

   For the aioli:

  1. Crush in a mortar the peeled garlic cloves with a little salt and pepper. To obtain a paste, add egg yolks, moving the pestle with a circular motion, gradually add 5 tablespoons of oil ttill it thickens. Finally, add lemon juice and stop stiring.
  2. Keep in the refrigerator.

      Wash asparagus and cut the hard base off.

  1. Wrap a slice of ham around each asparagus spear so that the tip of the spear sticks out, and put them in a baking dish.
  2. Season with salt and some pepper and drizzle of olive oil.

For cooking:

  1. Bake at 220 º C for 10 minutes.
  2. Serve hot, topped with alioli sauce.
