Ingredients
  • 1 piece of seitan
  • 1 zucchini
  • ½ red pepper
  • 1 onion
  • 1 carrot
  • 6 asparagus
  • 2 garlic sprouts
  • 200 gr. quinoa
  • 200 gr. mandarin juice
  • 2 mandarins

 

Preparation
  1. Cook the quinoa in salted water till al dente. Chop all the vegetables and seitan into small pieces.
  2. Sauté the vegetables and seitan in oil, season and cook a for few minutes over a high heat. Add the quinoa, without any water, and work it in like a risotto. Mix well and add the mandarin juice and mandarin segments.
