Ingredients
  • 1 bunch watercress
  • 5 leaves of escarole
  • 1 avocado
  • 1 bunch of radishes
  • 1 small bulb of fennel
  • 1 ripe mango
  • 1 lemon
  • virgin olive oil / sea salt
Preparation
  1. Wash and drain the vegetables.
  2. Cut the fennel and radishes into strips then chop the avocado into small pieces and sprinkle with a little lemon juice now place in a serving dish, Chop up the endive and watercress and cover with the mango vinaigrette
  3. For the vinaigrette: Cut the mango into small cubes, add the lemon juice and nearly 3 tablespoons oil .Mix with a hand blender. Season the salad with the   lemon oil then if necessary add a little sea salt.
