Ingredients
  • 16 prawns or shrimp
  • 1 can coconut milk
  • 3 tablespoons tomato sauce
  • 1 spring onion
  • 1 leek
  • 1 tablespoon chopped cilantro
  • 6 lime leaves
  • 1 sprig citronelle
  • 1 pinch of salt
Preparation
  1. In a saucepan over low heat fry the chopped onion and leek. Once the vegetables are tender, add the heads of the prawns, tomato sauce, cilantro, coconut milk, lime leaves and chopped citronelle branch  sliced open in the middle. Let cook for 10-12 minutes.
  2. Add a pinch of salt and remove from heat.
  3. Serve in glasses.
  4. Let the prawns cook from the  heat of the soup.
  5. Cool before serving.
  6. You can also serve warm.
If you cannot find lime leaves use the rind of a lime
