- 1kg potatoes
- 2 hard-boiled eggs
- 2 tbsp. chopped chives
- 1 small spring onion chopped finely
- 4 tbsp. of mayonnaise or crème fraise
- Peel the potatoes and chop up into chunks, then boil in plenty of water and season with salt. Do not overcook, because you will have a mushy salad.
- Drain when slightly hard to touch.
- While still warm mix in the mayonnaise, chives, onion and chopped eggs (halved).
- After mixing, place in the fridge until required.
